Bitter gourd has a devoted following for good reason ā when it's properly salted, rinsed, and cooked low and slow, that signature bitterness mellows into something deeply savory and almost addictive. The filling here is the real star: a jammy, spiced mixture of onion, tomato, ginger, and garlic toasted with cumin, turmeric, and amchur that gets packed into each gourd and seared until the skin turns wrinkled and caramelized. Chickpea flour binds everything together and adds a subtle nuttiness that makes the stuffing feel substantial and satisfying. Every component in this dish is entirely plant-based and naturally free of animal-derived thickeners or setting agents, so there's nothing hidden to second-guess. The technique of salting and resting the karela before cooking is a small step that makes a big difference, drawing out excess moisture and taming the bitterness without losing the gourd's character. A squeeze of lemon and a handful of fresh cilantro at the end brighten the whole plate and balance the warm, earthy spices beautifully. It's the kind of recipe that looks impressive on the table but comes together with pantry staples and a little patience.

Trim both ends of each karela and use a sharp knife to make a deep lengthwise slit down one side, stopping about 1/2 inch from each end ā do not cut all the way through. Use a small spoon to scrape out and discard the seeds and white pith from inside each gourd.
Rub 1 tsp of the salt all over the outside and inside of the karela. Place them in a colander set over a bowl and let them sit for 30 minutes. Rinse thoroughly under cold running water, then squeeze gently and pat dry with paper towels.
