Bitter gourd has a devoted following for good reason ā when it's cooked right, that signature bitterness mellows into something deeply savory and satisfying. The salting and rinsing step is the real secret here, drawing out excess bitterness so the gourd becomes a perfect vessel for the spiced filling inside. That filling is built from scratch with onion, tomato, ginger, garlic, and a carefully layered spice blend that includes amchur for a bright, tangy lift and chickpea flour to bind everything into a jammy, nutty mixture that holds its shape beautifully. Every ingredient in this dish is whole and straightforward ā no processed additives, no emulsifiers hiding in a sauce packet or spice blend, just real pantry staples doing exactly what they're supposed to do. The karela are pan-roasted low and slow until the skin turns deeply wrinkled and caramelized, which gives you that irresistible contrast between the tender, spiced filling and the slightly crisp exterior. A squeeze of lemon and a handful of fresh cilantro at the end brighten the whole plate without complicating it. This is the kind of recipe that rewards a little patience and makes you feel genuinely accomplished when it hits the table.

Trim both ends of each karela and use a sharp knife to make a deep lengthwise slit down one side, stopping about 1/2 inch from each end ā do not cut all the way through. Use a small spoon to scrape out and discard the seeds and white pith from inside each gourd.
Rub 1 tsp of the salt all over the outside and inside of the karela. Place them in a colander set over a bowl and let them sit for 30 minutes. Rinse thoroughly under cold running water, then squeeze gently and pat dry with paper towels.
