Bitter gourd has a devoted following across South Asian kitchens, and this stuffed version shows exactly why ā the karela's signature bite mellows beautifully once salted, rinsed, and slow-cooked until the skin turns deeply wrinkled and caramelized. The filling is where things get really exciting: a jammy, spiced mixture of onion, tomato, ginger, and garlic, toasted with cumin seeds and finished with chickpea flour that turns nutty and fragrant as it cooks down. Amchur adds a bright, tangy lift that balances the earthiness of the spices, and the whole thing gets pressed firmly into each gourd before hitting the pan. Every single ingredient here is naturally plant-based, so there's no swapping or substituting needed ā this dish is completely free of dairy without any compromise to flavor or richness. The slow pan-cooking method, covered first and then open to the heat, builds a gorgeous crust on the outside while keeping the filling moist and intensely savory inside. A squeeze of lemon and a handful of fresh cilantro at the end brighten everything up and make it feel restaurant-worthy on the plate. If you've been curious about cooking with karela but weren't sure where to start, this is the recipe to try first.

Trim both ends of each karela and use a sharp knife to make a deep lengthwise slit down one side, stopping about 1/2 inch from each end ā do not cut all the way through. Use a small spoon to scrape out and discard the seeds and white pith from inside each gourd.
Rub 1 tsp of the salt all over the outside and inside of the karela. Place them in a colander set over a bowl and let them sit for 30 minutes. Rinse thoroughly under cold running water, then squeeze gently and pat dry with paper towels.
