Bitter gourd is one of those vegetables that rewards patience ā and this dish is proof. Each karela is salted, rinsed, and gently squeezed to mellow its signature bitterness before being packed with a deeply spiced, jammy filling of onion, tomato, ginger, garlic, and chickpea flour toasted until nutty. The result is a filling that's bold, aromatic, and substantial enough to hold its own against the gourd's earthy intensity. Because every ingredient here is entirely plant-based, there's no need to scrutinize labels for hidden mammalian-derived additives ā the whole dish is built from vegetables, legume flour, and spices. The karela are then pan-cooked low and slow until the skin turns deeply wrinkled and caramelized, which is exactly when the bitterness softens into something almost savory-sweet. A squeeze of lemon at the table brightens everything up and cuts through the richness of the spiced filling beautifully. If you've been sleeping on stuffed bitter gourd, this is the recipe that will finally convert you.

Trim both ends of each karela and use a sharp knife to make a deep lengthwise slit down one side, stopping about 1/2 inch from each end ā do not cut all the way through. Use a small spoon to scrape out and discard the seeds and white pith from inside each gourd.
Rub 1 tsp of the salt all over the outside and inside of the karela. Place them in a colander set over a bowl and let them sit for 30 minutes. Rinse thoroughly under cold running water, then squeeze gently and pat dry with paper towels.
