Heat a small skillet over medium heat. Add the pecan halves and drizzle with 1 tbsp maple syrup and 1/8 tsp fine salt. Stir to coat and cook, stirring frequently, for 3–4 minutes until the syrup is absorbed and the pecans are fragrant and lightly caramelized. Transfer to a piece of parchment paper and spread in a single layer to cool completely, about 5 minutes.
In a small bowl, whisk together the olive oil, balsamic vinegar, 1 tbsp maple syrup, Dijon mustard, 1/4 tsp salt, and 1/4 tsp black pepper until smooth and emulsified.
