Crisp Persian cucumbers get smashed and torn so every jagged edge soaks up dressing, then tossed with scallions, fresh cilantro, and a pinch of red pepper flakes for a little heat. The dressing is where this one shines: creamy tahini whisked with fresh lemon juice, extra-virgin olive oil, a touch of maple syrup, and warm cumin, thinned to a pourable, clingy consistency that coats every piece. A scatter of toasted sesame seeds and an optional drizzle of sesame oil finish it off with nutty crunch and aroma. It's bright, garlicky-fresh in feel without any garlic needed, and comes together in minutes with zero cooking involved. Built on olive oil, lemon, tahini, and a pile of vegetables, this crunchy, herb-flecked salad slots easily into a Mediterranean-style spread alongside grains, legumes, or grilled vegetables. Keep it in regular rotation whenever you want something light, punchy, and full of texture.

Trim the ends off the cucumbers. Place them on a cutting board and smash each one firmly with the flat side of a chef's knife or the bottom of a heavy mug until the skin cracks and the flesh splits open. Tear or cut the smashed cucumbers into rough 1- to 1½-inch pieces and transfer to a colander set over the sink.
Toss the cucumber pieces with ½ tsp of the kosher salt and let them drain in the colander for 10 minutes, then pat dry with paper towels. This draws out excess water so the dressing clings rather than pools.
