Trim the root ends and dark-green tops from the leeks, leaving only the white and light-green parts. Halve each leek lengthwise, then rinse under cold running water, fanning the layers to remove any grit. Pat dry with a clean towel.
Heat the olive oil in a large skillet or wide sauté pan over medium heat until shimmering. Arrange the leek halves cut-side down in a single layer and cook, undisturbed, for 4–5 minutes, until the cut sides are golden and lightly caramelized.
