Golden-seared cabbage wedges are the star here, caramelized in olive oil until the cut edges turn deeply brown and nutty before braising low and slow in a garlic-and-broth pan sauce. Smoked paprika and a splash of apple cider vinegar give the braising liquid real depth, while a pinch of red pepper flakes adds a gentle kick if you want it. Everything reduces down to a glossy, savory glaze that clings to each wedge, and a scatter of fresh parsley at the end keeps things bright. It's a hands-off, one-pan side that turns humble cabbage into something worth making on repeat, and it fits neatly into a vegetarian table without any hassle. Serve it alongside grains, beans, or your favorite mains for an easy, comforting vegetable course.

Heat 2 tbsp of the olive oil in a large (12-inch) skillet or wide Dutch oven over medium-high heat until shimmering. Add the cabbage wedges cut-side down in a single layer and sear, undisturbed, for 3–4 minutes until the cut faces are deep golden brown. Flip to the second cut side and sear for another 2–3 minutes until similarly browned, then transfer to a plate.
Reduce the heat to medium and add the remaining 1 tbsp olive oil to the pan. Add the garlic and cook, stirring frequently, for 1–2 minutes until fragrant and just beginning to turn golden at the edges — watch closely, as it can brown quickly.
