Roast until a paring knife slides into the center of the largest beet with no resistance, 45–55 minutes depending on size.
While the beets roast, place the drained cashews, lemon juice, nutritional yeast, garlic clove, and 1/4 tsp salt in a food processor. Blend, scraping down the sides as needed, adding water 1 tbsp at a time until the mixture is smooth and spreadable — about the consistency of soft goat cheese.
