This vibrant, jewel-toned drink is the kind of thing that makes a whole table stop and stare before anyone even takes a sip. Fresh raspberries are simmered down with agave syrup into a glossy, deep-red syrup that brings a natural sweetness and a gorgeous color you simply cannot fake with a powder or concentrate. Muddled mint leaves add an herbal brightness that lifts the whole glass, playing beautifully against the tartness of freshly squeezed lemon juice. Every single ingredient here is entirely plant-based, so there's nothing to second-guess — no hidden animal-derived additives, no ambiguous sweeteners, just clean, whole-food flavor from start to finish. The process is straightforward: make the syrup, muddle the mint, combine everything in a pitcher, and adjust to your taste with a little extra agave or lemon. It's endlessly refreshing on a warm afternoon and impressive enough to serve at a gathering without any extra effort. Garnish with lemon slices and a sprig of mint and it looks like something straight off a restaurant menu.

Combine the raspberries, agave syrup, and 1/3 cup water in a small saucepan over medium heat. Cook, stirring occasionally and pressing the berries against the side of the pan, until the raspberries have completely broken down and the syrup is a deep red and slightly thickened, about 4–5 minutes.
Pour the raspberry mixture through a fine-mesh strainer set over a bowl or measuring cup, pressing firmly on the solids with the back of a spoon to extract as much liquid as possible. Discard the solids. Let the syrup cool to room temperature, about 15 minutes.
