Tart, fruity, and brilliantly pink, this drink is the kind of thing that makes a regular afternoon feel like a backyard party. Fresh raspberries are simmered down with agave syrup into a glossy, jewel-toned syrup that forms the backbone of the whole glass — no artificial colors or corn syrup shortcuts needed. Muddled mint adds an herbal brightness that plays beautifully against the citrus, making every sip feel a little more alive. Agave keeps the whole recipe completely plant-based, so it works for a wide range of guests without any compromise on flavor. The straining step is worth the extra minute — it gives you a silky-smooth syrup with none of the seeds getting in the way. You can dial the sweetness or tartness up or down right at the end, which means it's nearly impossible to get wrong. Serve it over a big pile of ice with a lemon slice and a sprig of mint, and it looks like something you'd pay twelve dollars for at a rooftop bar.

Combine the raspberries, agave syrup, and 1/3 cup water in a small saucepan over medium heat. Cook, stirring occasionally and pressing the berries against the side of the pan, until the raspberries have completely broken down and the syrup is a deep red and slightly thickened, about 4–5 minutes.
Pour the raspberry mixture through a fine-mesh strainer set over a bowl or measuring cup, pressing firmly on the solids with the back of a spoon to extract as much liquid as possible. Discard the solids. Let the syrup cool to room temperature, about 15 minutes.
