Tart, fruity, and impossibly refreshing, this raspberry lemonade is the kind of drink that makes a regular afternoon feel like a special occasion. Fresh raspberries are simmered down with agave syrup into a jewel-toned syrup that gets strained smooth before meeting bright lemon juice and cold water in a pitcher. Muddled mint leaves add an herbal lift that takes the whole thing from simple to seriously impressive. Agave keeps it fully plant-based while lending a clean, floral sweetness that plays beautifully against the tartness of fresh-squeezed lemon. Because every ingredient here is whole and straightforward, there's zero guesswork about what's actually in your glass — no store-bought concentrates, no mystery additives. You can tweak the balance right in the pitcher, adding a splash more lemon or a drizzle more agave until it's exactly what you're craving. Serve it over ice with a sprig of mint and a lemon slice for a drink that looks as good as it tastes.

Combine the raspberries, agave syrup, and 1/3 cup water in a small saucepan over medium heat. Cook, stirring occasionally and pressing the berries against the side of the pan, until the raspberries have completely broken down and the syrup is a deep red and slightly thickened, about 4–5 minutes.
Pour the raspberry mixture through a fine-mesh strainer set over a bowl or measuring cup, pressing firmly on the solids with the back of a spoon to extract as much liquid as possible. Discard the solids. Let the syrup cool to room temperature, about 15 minutes.
