Tart, fruity, and impossibly refreshing, this drink is the kind of thing you want to sip on a hot afternoon when you need something that feels a little special without a lot of effort. The homemade raspberry syrup is the real star — simmered down from fresh berries and agave until it turns a gorgeous deep red, then strained smooth so every sip is silky and bright. Muddling fresh mint directly in the pitcher before adding the lemon juice and syrup layers in an herbal note that makes the whole thing taste like something from a fancy café. Because it's built entirely from whole fruits, fresh herbs, and agave, there's nothing hidden or processed to second-guess — just clean, vibrant ingredients you can feel good about. It's naturally plant-based and completely free of grains, so it fits easily into a wide range of eating styles without any substitutions required. Adjust the agave or lemon juice at the end to dial in exactly the balance you love, whether you prefer it punchy and tart or a little more mellow and sweet.

Combine the raspberries, agave syrup, and 1/3 cup water in a small saucepan over medium heat. Cook, stirring occasionally and pressing the berries against the side of the pan, until the raspberries have completely broken down and the syrup is a deep red and slightly thickened, about 4–5 minutes.
Pour the raspberry mixture through a fine-mesh strainer set over a bowl or measuring cup, pressing firmly on the solids with the back of a spoon to extract as much liquid as possible. Discard the solids. Let the syrup cool to room temperature, about 15 minutes.
