Tart, fruity, and impossibly refreshing, this vibrant pink lemonade is the kind of drink that makes a regular afternoon feel like a backyard party. Fresh raspberries are simmered down with agave syrup into a glossy, jewel-red syrup that gets strained smooth before meeting bright squeezed lemon juice and muddled mint in the pitcher. The result is layered and complex — sweet, tart, herbal — without a single artificial shortcut in sight. Lupin, a legume sometimes used as a flour or protein additive in packaged beverages and drink mixes, is simply never a concern here since every ingredient is a whole, recognizable food straight from the produce aisle or pantry. Agave keeps it fully plant-based while adding a gentle, neutral sweetness that lets the raspberries and lemon shine. Muddling the mint directly in the pitcher releases its oils and gives the whole drink an aromatic lift that makes it taste far more special than the effort involved. Serve it over ice with a lemon slice and a sprig of mint for a glass that looks as good as it tastes.

Combine the raspberries, agave syrup, and 1/3 cup water in a small saucepan over medium heat. Cook, stirring occasionally and pressing the berries against the side of the pan, until the raspberries have completely broken down and the syrup is a deep red and slightly thickened, about 4–5 minutes.
Pour the raspberry mixture through a fine-mesh strainer set over a bowl or measuring cup, pressing firmly on the solids with the back of a spoon to extract as much liquid as possible. Discard the solids. Let the syrup cool to room temperature, about 15 minutes.
