Tart, fruity, and brilliantly pink, this drink is the kind of thing you want sweating on a table at a summer gathering. Fresh raspberries are cooked down into a glossy, jewel-toned syrup with agave and water, then strained smooth before meeting bright lemon juice and muddled mint in a big pitcher. The result is layered and complex in the best way — floral from the mint, tangy from the lemons, and just sweet enough from the agave. Every ingredient here is straightforwardly plant-based and free from any coconut-derived sweeteners or additives, so there's no label-reading required. Many store-bought lemonades and flavored drinks sneak in coconut sugar or coconut water for sweetness, but this one keeps things clean with agave as the only sweetener. It's easy to scale up for a crowd, and the raspberry syrup can be made ahead and stashed in the fridge until you're ready to mix. Finish each glass with a lemon slice and a sprig of mint and it looks like something from a café menu.

Combine the raspberries, agave syrup, and 1/3 cup water in a small saucepan over medium heat. Cook, stirring occasionally and pressing the berries against the side of the pan, until the raspberries have completely broken down and the syrup is a deep red and slightly thickened, about 4–5 minutes.
Pour the raspberry mixture through a fine-mesh strainer set over a bowl or measuring cup, pressing firmly on the solids with the back of a spoon to extract as much liquid as possible. Discard the solids. Let the syrup cool to room temperature, about 15 minutes.
