Tart, fruity, and impossibly refreshing, this raspberry lemonade is the kind of drink that makes a regular afternoon feel like a backyard party. Fresh raspberries are cooked down with agave syrup into a gorgeous deep-red syrup that brings a natural sweetness without any refined sugar. Muddled mint leaves add an herbal brightness that takes the whole thing to another level — it's layered and complex in the best, most effortless way. Every single ingredient here is plant-based and straightforward, so there's zero guesswork about what's in your glass. The agave keeps it fully vegan-friendly, swapping out honey without sacrificing any of that smooth, mellow sweetness. It's easy enough to throw together on a weeknight but pretty enough to serve at a summer gathering with lemon slices and fresh mint sprigs floating on top. Once you taste homemade raspberry syrup, the bottled stuff is never going to cut it again.

Combine the raspberries, agave syrup, and 1/3 cup water in a small saucepan over medium heat. Cook, stirring occasionally and pressing the berries against the side of the pan, until the raspberries have completely broken down and the syrup is a deep red and slightly thickened, about 4–5 minutes.
Pour the raspberry mixture through a fine-mesh strainer set over a bowl or measuring cup, pressing firmly on the solids with the back of a spoon to extract as much liquid as possible. Discard the solids. Let the syrup cool to room temperature, about 15 minutes.
