Few drinks feel as celebratory as a tall glass of something bright pink, and this one delivers on every level. Fresh raspberries are simmered down with agave syrup into a gorgeous, jewel-toned syrup that forms the backbone of the whole drink — no artificial colors or mystery additives in sight. Muddled mint leaves add an herbal lift that makes the lemonade feel genuinely refreshing rather than just sweet, and the combination of fresh-squeezed lemon juice and cold water keeps everything crisp and balanced. Because every ingredient here is naturally plant-based and free from any heat-producing compounds, it's a completely worry-free sip for anyone managing sensitivity to capsaicin or simply avoiding spicy ingredients. The agave syrup is a smart swap for honey or cane syrup, keeping the whole recipe vegan without sacrificing any of that lush sweetness. You can easily dial the tartness or sweetness up or down at the end, so it comes out exactly the way you like it. Serve it over ice with a sprig of mint and a lemon wheel, and it looks like something you'd pay twelve dollars for at a rooftop bar.

Combine the raspberries, agave syrup, and 1/3 cup water in a small saucepan over medium heat. Cook, stirring occasionally and pressing the berries against the side of the pan, until the raspberries have completely broken down and the syrup is a deep red and slightly thickened, about 4–5 minutes.
Pour the raspberry mixture through a fine-mesh strainer set over a bowl or measuring cup, pressing firmly on the solids with the back of a spoon to extract as much liquid as possible. Discard the solids. Let the syrup cool to room temperature, about 15 minutes.
