Tart, fruity, and impossibly refreshing, this vibrant pink drink is the kind of thing that makes a hot afternoon feel like a celebration. A homemade raspberry syrup — cooked down from fresh berries and agave, then strained silky smooth — gives it a depth of flavor that no store-bought mix can touch. Muddled mint leaves add an herbal brightness that ties the whole thing together, making every sip feel a little fancy without any real effort. The base is completely plant-based, sweetened with agave instead of honey, so it works beautifully for anyone keeping things vegan. Since every ingredient here is a whole, simple food — fresh fruit, citrus, herbs, and water — there's no label-reading required and zero concern about hidden additives or cross-contact with tree nuts. You can tweak the balance at the end, adding a splash more lemon for extra pucker or a drizzle more agave if you want it sweeter, which means it's easy to make everyone at the table happy. Serve it over ice with a lemon wheel and a sprig of mint and it looks like something straight off a restaurant menu.

Combine the raspberries, agave syrup, and 1/3 cup water in a small saucepan over medium heat. Cook, stirring occasionally and pressing the berries against the side of the pan, until the raspberries have completely broken down and the syrup is a deep red and slightly thickened, about 4–5 minutes.
Pour the raspberry mixture through a fine-mesh strainer set over a bowl or measuring cup, pressing firmly on the solids with the back of a spoon to extract as much liquid as possible. Discard the solids. Let the syrup cool to room temperature, about 15 minutes.
