Deeply savory kombu-shiitake broth forms the soul of this bowl, simmered low and slow until it turns rich amber, then finished with white miso, toasted sesame oil, a splash of rice vinegar, and fresh ginger for brightness. Meaty king oyster mushrooms and slabs of firm tofu get roasted until golden and caramelized at the edges, adding real depth and chew alongside tender baby bok choy. Everything gets piled over a bowl of hot noodles and finished with a scatter of scallions, toasted sesame seeds, and a drizzle of chili oil if you like some heat. It's the kind of bowl that feels like a restaurant splurge but comes together with pantry staples and a sheet pan. This one is a great fit for a gluten free kitchen, delivering all the cozy, slurpable comfort of a noodle shop favorite without any guesswork at the table. Nori sheets tucked along the rim add a nice briny finish if you want to go all out.

Combine the water, dried kombu, and dried shiitake mushrooms in a large pot. Let soak at room temperature for 30 minutes, until the mushrooms are softened and the water has turned a light amber color.
Place the pot over medium heat and bring to a bare simmer — small bubbles at the edges, not a rolling boil. Remove and discard the kombu just before the water reaches a full simmer (about 140–150°F / 60–65°C), then continue to simmer the shiitakes for 15 minutes. Remove the shiitakes with a slotted spoon and reserve for another use or discard. Strain the broth through a fine-mesh strainer into a clean pot and discard any solids.
