This South Indian kootu is the kind of deeply satisfying, plant-based dish that proves comfort food doesn't need dairy or meat to feel complete. Tender chana dal and soft pumpkin come together in a thick, spoonable stew that's warming without being heavy — perfect for four people on a weeknight or as a standout side at a bigger spread. The real magic is in the freshly blended coconut paste, made with cumin seeds and dried red chile, which gives the dish a rich, slightly coarse texture that store-bought shortcuts simply can't replicate. Everything is naturally free of animal products from start to finish, so there's no swapping or substituting required — just straightforward, honest ingredients. The final tempering of mustard seeds, curry leaves, and asafoetida bloomed in coconut oil is poured over at the very end, sending up an irresistible fragrance that signals dinner is ready. If you've never cooked with curry leaves before, this is a beautiful introduction — they fry up crisp and aromatic in under a minute and completely transform the dish.

Combine the chana dal, 1 1/2 cups water, and 1/4 tsp turmeric in a large saucepan. Bring to a boil over medium-high heat, then reduce to a steady simmer, cover partially, and cook for 20–25 minutes, until the dal is completely tender and most of the water is absorbed. The grains should be soft throughout but still hold their shape.
While the dal cooks, blend the grated coconut, cumin seeds, dried red chile, and 3 tbsp water in a blender or food processor until a coarse, slightly grainy paste forms, about 30–45 seconds. Set aside.
