Whole green moong dal is the star here — a legume celebrated for being easier on digestion than many of its bean-family cousins, and when soaked overnight it becomes even gentler and more bioavailable. The batter comes together with fresh ginger, cumin, and green chilies, ingredients that have long been associated with supporting a happy gut, and the whole thing is naturally ferment-free, gluten-free, and completely plant-based. Spreading the batter thin across a hot skillet gives you crispy, lacy edges and a satisfying chew without any heaviness — this is the kind of meal that leaves you feeling nourished rather than sluggish. The ginger chutney alongside is a genuine highlight: blended coconut and fresh ginger get a quick tempering of mustard seeds and curry leaves that makes the whole condiment bloom with warmth and fragrance. Chopped onion and cilantro scattered over the top add brightness and a little crunch that plays beautifully against the soft, golden crepe beneath. It takes some planning ahead for the overnight soak, but the actual cooking is fast and deeply satisfying once you get into a rhythm at the pan.

Combine the whole green moong dal and raw rice in a large bowl, cover with cold water by at least 2 inches, and soak for 8 hours or overnight at room temperature.
Drain the soaked dal and rice and transfer to a blender. Add the roughly chopped ginger, green chilies, cumin seeds, salt, and 1/2 cup water. Blend on high until the batter is smooth and pourable — it should be slightly thicker than heavy cream but thin enough to spread easily across the pan. Add water 1 tablespoon at a time if needed to reach this consistency.
