These crispy, lacy crepes are made from whole green moong dal and a touch of raw rice, soaked overnight and blended into a smooth, spoonable batter that hits the hot pan with a satisfying sizzle. The result is a golden, paper-thin dosa with a subtly earthy flavor, flecked with fresh onion and cilantro and served alongside a bright, coconut-ginger chutney that's finished with a quick mustard-seed tempering. Every single ingredient here is naturally free of stimulants — no tea, no coffee, no chocolate — so this is a genuinely effortless fit for anyone keeping caffeine out of their day. The batter comes together in a blender, the chutney takes just minutes, and the whole process is more approachable than it might look. Green moong dal is also quietly nutritious, bringing plant-based protein and fiber to what feels like a light, snackable meal. Whether you're making these for a weekend brunch or a quick weeknight dinner, they're best eaten straight off the griddle while the edges are still crisp and the chutney is warm from the tempering oil.

Combine the whole green moong dal and raw rice in a large bowl, cover with cold water by at least 2 inches, and soak for 8 hours or overnight at room temperature.
Drain the soaked dal and rice and transfer to a blender. Add the roughly chopped ginger, green chilies, cumin seeds, salt, and 1/2 cup water. Blend on high until the batter is smooth and pourable — it should be slightly thicker than heavy cream but thin enough to spread easily across the pan. Add water 1 tablespoon at a time if needed to reach this consistency.
