Summer in a glass doesn't get much better than this — ripe peaches simmered into a silky homemade syrup, bright fresh lemon juice, and muddled mint all coming together in one seriously refreshing pitcher drink. Every ingredient here is straightforward and plant-based, so there's nothing hidden to second-guess when you're keeping things free of fermented or yeast-derived additives. The peach syrup is the real star: cooking the fruit down with sugar and water coaxes out a concentrated, jammy sweetness that store-bought syrups just can't replicate. Muddling the mint directly in the pitcher releases its essential oils, giving the whole drink a cool, herbal lift that balances the tartness of the lemon beautifully. You can tweak the final pour to your taste — a little more lemon if you like it sharp, a splash more water if you want it lighter — which makes this endlessly easy to get just right. Pile in the ice, drop in a lemon slice and a sprig of mint, and you've got something that looks as good as it tastes.

Combine the chopped peaches, sugar, and 1/2 cup water in a medium saucepan over medium heat. Cook, stirring occasionally, until the sugar dissolves and the peaches soften and begin to break down, about 8–10 minutes.
Remove the pan from the heat and let the mixture cool for 20 minutes. Pour through a fine-mesh strainer into a bowl or measuring cup, pressing the peach solids firmly with the back of a spoon to extract as much liquid as possible. Discard the solids.
