Summer in a glass doesn't get much better than this — ripe peaches simmered into a silky homemade syrup, bright fresh lemon juice, and muddled mint all coming together in one seriously refreshing pitcher drink. Every ingredient here is clean and straightforward: real fruit, sugar, water, and herbs, with absolutely nothing processed or stabilized hiding in the mix. That makes it a natural fit for anyone avoiding additives like xanthan gum, which can sneak into store-bought flavored syrups, bottled lemonades, and even some cocktail mixers. The peach syrup is the real star — cooking the fruit down and pressing it through a strainer coaxes out every drop of that sweet, floral flavor without any thickeners needed. Muddling the mint directly in the pitcher releases its oils in a way that makes the whole drink smell incredible before you even take a sip. It's easy enough to throw together on a weeknight but impressive enough to serve at a backyard gathering, and the optional lemon slices and mint sprigs make it look like something from a restaurant menu.

Combine the chopped peaches, sugar, and 1/2 cup water in a medium saucepan over medium heat. Cook, stirring occasionally, until the sugar dissolves and the peaches soften and begin to break down, about 8–10 minutes.
Remove the pan from the heat and let the mixture cool for 20 minutes. Pour through a fine-mesh strainer into a bowl or measuring cup, pressing the peach solids firmly with the back of a spoon to extract as much liquid as possible. Discard the solids.
