Summer in a glass doesn't get much better than this — ripe peaches simmered into a silky homemade syrup, bright fresh lemon juice, and muddled mint all swirled together into something that tastes genuinely special. Every single ingredient here is naturally free of wheat and gluten, so there's no label-scanning or substitution stress involved — just real, whole produce doing all the heavy lifting. The peach syrup is the real star: cooking the fruit down with sugar and water coaxes out a concentrated, jammy sweetness that no store-bought mixer can replicate. Muddling the mint directly in the pitcher releases its oils and gives the whole drink an herby, cooling edge that keeps it from being cloying. It's easy to dial in to your taste, too — a little extra lemon if you like it tart, a splash more water if you want it lighter. Serve it over ice with a lemon slice and a fresh mint sprig and it looks like something from a restaurant patio without any of the effort.

Combine the chopped peaches, sugar, and 1/2 cup water in a medium saucepan over medium heat. Cook, stirring occasionally, until the sugar dissolves and the peaches soften and begin to break down, about 8–10 minutes.
Remove the pan from the heat and let the mixture cool for 20 minutes. Pour through a fine-mesh strainer into a bowl or measuring cup, pressing the peach solids firmly with the back of a spoon to extract as much liquid as possible. Discard the solids.
