Summer in a glass doesn't get much better than this — ripe peaches simmered into a silky homemade syrup, bright fresh lemon juice, and muddled mint all coming together in one seriously refreshing pitcher drink. Every ingredient here is straightforward and plant-based, so there's zero guesswork about hidden additives or processed flavor syrups that can sneak unwanted ingredients into your glass. The peach syrup is the real star: chopped peaches are cooked down with sugar and water until they practically melt, then strained to produce a jewel-toned, intensely fruity liquid that store-bought versions simply can't match. Muddling the mint directly in the pitcher releases its essential oils and gives the whole drink a garden-fresh lift that makes it feel genuinely special. A good stir, a taste, and a quick balance of lemon or water means you're in full control of the final flavor. Serve it over ice with a lemon slice and a sprig of mint and it looks as gorgeous as anything you'd order at a rooftop bar — no fancy equipment or complicated technique required.

Combine the chopped peaches, sugar, and 1/2 cup water in a medium saucepan over medium heat. Cook, stirring occasionally, until the sugar dissolves and the peaches soften and begin to break down, about 8–10 minutes.
Remove the pan from the heat and let the mixture cool for 20 minutes. Pour through a fine-mesh strainer into a bowl or measuring cup, pressing the peach solids firmly with the back of a spoon to extract as much liquid as possible. Discard the solids.
