There is something undeniably refreshing about a glass of lemonade that tastes like peak summer, and this peach version with fresh mint delivers exactly that. Ripe peaches are simmered down into a silky homemade syrup that brings a floral, fruity sweetness you simply cannot get from a bottle. Fresh lemon juice keeps everything bright and tangy, while muddled mint leaves add a cool, aromatic lift that makes each sip feel a little fancy. The whole thing comes together in one pitcher, making it perfect for backyard gatherings, lazy afternoons, or anytime you want something that looks impressive without much effort. Every single ingredient here is naturally plant-based and free from any animal products or seafood concerns, so it works for a wide range of guests without any substitutions needed. Adjust the tartness or sweetness right in the pitcher until it tastes exactly the way you like it — that little finishing step makes a real difference.

Combine the chopped peaches, sugar, and 1/2 cup water in a medium saucepan over medium heat. Cook, stirring occasionally, until the sugar dissolves and the peaches soften and begin to break down, about 8–10 minutes.
Remove the pan from the heat and let the mixture cool for 20 minutes. Pour through a fine-mesh strainer into a bowl or measuring cup, pressing the peach solids firmly with the back of a spoon to extract as much liquid as possible. Discard the solids.
