Summer in a glass doesn't get much better than this — ripe peaches cooked down into a silky homemade syrup, bright fresh lemon juice, and muddled mint all coming together in one seriously refreshing pitcher drink. Every single ingredient here is whole and recognizable, which means no mystery oils, no processed syrups from a bottle, and nothing that doesn't belong in a clean, feel-good beverage. The peach syrup is the real star: simmering chopped peaches with sugar and water until they break down, then pressing every last drop of that golden liquid through a strainer, gives you a depth of fruity sweetness that store-bought lemonade simply cannot touch. Muddling the mint directly in the pitcher before adding the liquids is a small step that makes a big difference, releasing those aromatic oils so the herb flavor runs all the way through the drink rather than just floating on top. It's naturally vegan, completely plant-based, and built entirely from fruit, citrus, sugar, and water — as straightforward as a recipe gets. Serve it over ice with a lemon slice and a fresh mint sprig and it looks like something you'd pay twelve dollars for at a rooftop bar.

Combine the chopped peaches, sugar, and 1/2 cup water in a medium saucepan over medium heat. Cook, stirring occasionally, until the sugar dissolves and the peaches soften and begin to break down, about 8–10 minutes.
Remove the pan from the heat and let the mixture cool for 20 minutes. Pour through a fine-mesh strainer into a bowl or measuring cup, pressing the peach solids firmly with the back of a spoon to extract as much liquid as possible. Discard the solids.
