Summer in a glass doesn't get much better than this — ripe peaches simmered into a silky homemade syrup, bright fresh lemon juice, and muddled mint all coming together in one seriously refreshing pitcher drink. Every ingredient here is straightforward and plant-based, so there's no need to scan labels or worry about hidden additives sneaking in from a store-bought mix. The peach syrup is the real star: cooking the fruit down with sugar and water coaxes out deep, jammy sweetness, and pressing the solids through a strainer means you get every last drop of that peachy goodness. Muddling the mint directly in the pitcher releases its oils and gives the whole drink a garden-fresh lift that dried herbs simply can't replicate. It's easy to dial in the balance at the end — a little extra lemon if you like it tart, a splash more water if you want it lighter — so it always tastes exactly right for your crowd. Serve it over ice with a lemon slice and a sprig of mint and it looks as good as it tastes, whether you're hosting a backyard gathering or just treating yourself on a warm afternoon.

Combine the chopped peaches, sugar, and 1/2 cup water in a medium saucepan over medium heat. Cook, stirring occasionally, until the sugar dissolves and the peaches soften and begin to break down, about 8–10 minutes.
Remove the pan from the heat and let the mixture cool for 20 minutes. Pour through a fine-mesh strainer into a bowl or measuring cup, pressing the peach solids firmly with the back of a spoon to extract as much liquid as possible. Discard the solids.
