There is something undeniably refreshing about a homemade lemonade that goes beyond the basic, and the combination of ripe summer peaches and bruised fresh mint takes this one to a completely different level. The peaches are simmered down into a silky simple syrup that carries their natural sweetness and floral depth right into every glass. Fresh lemon juice keeps things bright and tangy, while the muddled mint adds a cool, aromatic lift that makes this feel like something you'd order at a nice café. Every single ingredient here is naturally free of legumes — no hidden additives, no processed syrups to second-guess, just fruit, sugar, water, and herbs doing exactly what they're supposed to do. It's also fully plant-based, so it works beautifully for a wide range of guests without any compromises on flavor. Make a big pitcher, keep it in the fridge, and watch it disappear faster than you expect.

Combine the chopped peaches, sugar, and 1/2 cup water in a medium saucepan over medium heat. Cook, stirring occasionally, until the sugar dissolves and the peaches soften and begin to break down, about 8–10 minutes.
Remove the pan from the heat and let the mixture cool for 20 minutes. Pour through a fine-mesh strainer into a bowl or measuring cup, pressing the peach solids firmly with the back of a spoon to extract as much liquid as possible. Discard the solids.
