Summer in a glass doesn't get much better than this — ripe peaches simmered into a silky homemade syrup, bright fresh lemon juice, and muddled mint all coming together in one seriously refreshing pitcher drink. Every ingredient here is naturally free of dairy, so there's no swapping or substituting needed; it just works, effortlessly. The peach syrup is the real star, cooked down until the fruit breaks apart and every drop of flavor gets pressed through the strainer, giving you this gorgeous, golden sweetness that store-bought syrups can't touch. Muddling the mint directly in the pitcher means the whole drink smells incredible before you even pour a glass. A final taste-and-adjust step lets you dial in the tartness or sweetness to exactly where you want it, which is the kind of flexibility that makes a recipe feel like yours. Serve it over ice with a lemon slice and a sprig of mint, and it looks like something from a restaurant patio without any of the effort.

Combine the chopped peaches, sugar, and 1/2 cup water in a medium saucepan over medium heat. Cook, stirring occasionally, until the sugar dissolves and the peaches soften and begin to break down, about 8–10 minutes.
Remove the pan from the heat and let the mixture cool for 20 minutes. Pour through a fine-mesh strainer into a bowl or measuring cup, pressing the peach solids firmly with the back of a spoon to extract as much liquid as possible. Discard the solids.
