There is something undeniably refreshing about a glass of homemade lemonade, and this peachy, mint-kissed version takes it to a whole new level. The base gets its sweetness from a quick peach simple syrup made with fresh fruit, granulated sugar, and water — no animal-derived sweeteners anywhere in sight, which makes it a genuinely worry-free pour for anyone avoiding honey or bee-derived ingredients. Fresh lemon juice gives it that bright, tart backbone, while muddled mint leaves add a cool, aromatic lift that makes every sip feel a little fancy. The peach syrup is strained to a silky smoothness, so you get pure, concentrated fruit flavor without any stringy bits getting in the way. It all comes together in a single pitcher, which means cleanup is minimal and the payoff is enormous. Serve it over ice with a lemon slice and a sprig of mint and it looks like something straight off a restaurant patio menu.

Combine the chopped peaches, sugar, and 1/2 cup water in a medium saucepan over medium heat. Cook, stirring occasionally, until the sugar dissolves and the peaches soften and begin to break down, about 8–10 minutes.
Remove the pan from the heat and let the mixture cool for 20 minutes. Pour through a fine-mesh strainer into a bowl or measuring cup, pressing the peach solids firmly with the back of a spoon to extract as much liquid as possible. Discard the solids.
