Summer in a glass doesn't get much better than this — ripe peaches simmered into a silky homemade syrup, bright fresh lemon juice, and muddled mint all coming together in one seriously refreshing pitcher drink. Every single ingredient here is naturally free of gluten, so there's no label-scanning or substitution stress involved — just whole, simple produce doing exactly what it's supposed to do. The peach syrup is the real star: cooking the fruit down and pressing it through a strainer coaxes out an intensely sweet, floral liquid that store-bought syrups simply can't match. Muddling the mint directly in the pitcher releases its oils and gives the whole drink a cool, herby backbone that keeps it from tipping into cloying territory. It's the kind of drink that looks stunning on a table without requiring any special equipment beyond a saucepan and a strainer. Make a big batch for a backyard gathering or keep it in the fridge for a few days of effortless sipping — either way, it disappears fast.

Combine the chopped peaches, sugar, and 1/2 cup water in a medium saucepan over medium heat. Cook, stirring occasionally, until the sugar dissolves and the peaches soften and begin to break down, about 8–10 minutes.
Remove the pan from the heat and let the mixture cool for 20 minutes. Pour through a fine-mesh strainer into a bowl or measuring cup, pressing the peach solids firmly with the back of a spoon to extract as much liquid as possible. Discard the solids.
