Summer in a glass doesn't get much better than this — ripe peaches simmered down into a silky homemade syrup, brightened with fresh-squeezed lemon juice and muddled mint. Every ingredient here is exactly what it says it is: real fruit, real citrus, real herbs, and nothing hiding in the background. That matters more than it sounds, because so many store-bought lemonades and flavored drinks sneak in additives and emulsifying agents to extend shelf life or improve texture. Making the syrup yourself from scratch means you control every drop that goes into the pitcher. The muddled mint adds a cool, aromatic lift that makes the whole drink feel polished without any extra effort. It's endlessly adjustable too — a little more lemon if you like it tart, a splash more water if you want it lighter. Serve it over ice with a sprig of mint and you've got something that looks and tastes like it came from a fancy café, made entirely from your own kitchen.

Combine the chopped peaches, sugar, and 1/2 cup water in a medium saucepan over medium heat. Cook, stirring occasionally, until the sugar dissolves and the peaches soften and begin to break down, about 8–10 minutes.
Remove the pan from the heat and let the mixture cool for 20 minutes. Pour through a fine-mesh strainer into a bowl or measuring cup, pressing the peach solids firmly with the back of a spoon to extract as much liquid as possible. Discard the solids.
