Summer in a glass doesn't get much better than this — ripe peaches simmered into a silky homemade syrup, bright fresh lemon juice, and muddled mint all coming together in one seriously refreshing pitcher drink. Every ingredient here is naturally plant-based, so there's nothing to swap or second-guess; no dairy sneaks its way into a good lemonade anyway, but it's always nice to have a recipe that's unambiguously clean from the start. The peach simple syrup is the real star — cooking the fruit down with sugar and water coaxes out a concentrated, jammy sweetness that store-bought syrups just can't replicate. Muddling the mint directly in the pitcher releases those bright, herby oils and infuses the whole drink without any fuss. A final taste-and-adjust step means you can dial in the tartness or sweetness exactly to your liking before pouring. Serve it over ice with a lemon slice and a sprig of mint and it looks as good as it tastes — the kind of drink that disappears fast at any backyard gathering.

Combine the chopped peaches, sugar, and 1/2 cup water in a medium saucepan over medium heat. Cook, stirring occasionally, until the sugar dissolves and the peaches soften and begin to break down, about 8–10 minutes.
Remove the pan from the heat and let the mixture cool for 20 minutes. Pour through a fine-mesh strainer into a bowl or measuring cup, pressing the peach solids firmly with the back of a spoon to extract as much liquid as possible. Discard the solids.
