Summer in a glass doesn't get much better than this — ripe peaches simmered into a silky homemade syrup, bright fresh lemon juice, and muddled mint all coming together in one seriously refreshing pitcher drink. Every ingredient here is completely plant-based, so there's nothing to second-guess and no label-reading required. The peach syrup is the real star: cooking the fruit down with sugar and water coaxes out a concentrated, floral sweetness that no store-bought mixer can replicate. Muddling the mint directly in the pitcher releases its oils and gives the whole drink a cool, herbal lift that balances the tartness of the lemon beautifully. It's easy enough to throw together on a weekday afternoon but impressive enough to serve at a backyard gathering. Garnish with a lemon slice and a fresh mint sprig and it looks like something straight off a restaurant menu.

Combine the chopped peaches, sugar, and 1/2 cup water in a medium saucepan over medium heat. Cook, stirring occasionally, until the sugar dissolves and the peaches soften and begin to break down, about 8–10 minutes.
Remove the pan from the heat and let the mixture cool for 20 minutes. Pour through a fine-mesh strainer into a bowl or measuring cup, pressing the peach solids firmly with the back of a spoon to extract as much liquid as possible. Discard the solids.
