Ripe summer peaches, fresh-squeezed lemons, and a handful of garden mint come together in a drink that tastes like the best version of a backyard afternoon. The peach simple syrup is made entirely from scratch — just fruit, sugar, and water cooked down until silky and sweet — so you know exactly what's going into your glass. That matters more than it might seem, because many store-bought flavored syrups, juice blends, and even some bottled lemonades sneak in additives and thickeners that have no business being in a simple fruit drink. Here, every ingredient is clean and straightforward, which makes this a genuinely worry-free pour. Muddling the fresh mint directly in the pitcher unlocks its bright, herbal oils and gives the whole drink a lift that dried or bottled mint just can't replicate. The balance of tart lemon, floral peach, and cool mint is refreshing without being cloying, and you can easily dial the sweetness or acidity up or down to suit your taste. It's the kind of drink you'll want to make in a big batch and keep in the fridge all week.

Combine the chopped peaches, sugar, and 1/2 cup water in a medium saucepan over medium heat. Cook, stirring occasionally, until the sugar dissolves and the peaches soften and begin to break down, about 8–10 minutes.
Remove the pan from the heat and let the mixture cool for 20 minutes. Pour through a fine-mesh strainer into a bowl or measuring cup, pressing the peach solids firmly with the back of a spoon to extract as much liquid as possible. Discard the solids.
