Summer in a glass doesn't get much better than this — ripe peaches simmered into a silky homemade syrup, bright fresh lemon juice, and muddled mint all coming together in one seriously refreshing pitcher drink. Every ingredient here is completely plant-based, so there's nothing to second-guess or swap out. The peach syrup is the real star: cooking the fruit down with sugar and water coaxes out a concentrated, floral sweetness that no store-bought flavoring can match. Muddling the mint directly in the pitcher releases its essential oils and gives the whole drink a cool, herbal lift that plays beautifully against the tartness of the lemon. A final taste-and-adjust step means you can dial in the balance exactly to your liking — a little more lemon if you want it punchy, a splash more water if you prefer it mellow. Serve it over ice with a lemon slice and a fresh mint sprig and it looks as good as it tastes, whether you're hosting a backyard gathering or just treating yourself on a hot afternoon.

Combine the chopped peaches, sugar, and 1/2 cup water in a medium saucepan over medium heat. Cook, stirring occasionally, until the sugar dissolves and the peaches soften and begin to break down, about 8–10 minutes.
Remove the pan from the heat and let the mixture cool for 20 minutes. Pour through a fine-mesh strainer into a bowl or measuring cup, pressing the peach solids firmly with the back of a spoon to extract as much liquid as possible. Discard the solids.
