There is something almost too pretty to drink about a layered latte that goes from rosy pink at the bottom to deep earthy green at the top — almost. This one earns its looks with a real strawberry sauce cooked down with maple syrup until it turns thick and jammy, a properly whisked ceremonial-grade matcha, and frothy oat milk that ties it all together. Every element is made from scratch, which means you know exactly what went into your cup — no synthetic flavor packets, no mystery syrups, just whole ingredients doing all the heavy lifting. Artificial flavoring tends to sneak into coffee shop drinks and bottled matcha blends in ways that are hard to spot on a menu, so making this at home puts you fully in control. The technique of pouring the oat milk and matcha over the back of a spoon is a small extra step that creates those gorgeous distinct layers and makes the whole thing feel genuinely special. It works equally well as a slow weekend morning treat or an afternoon pick-me-up that looks like it came from a very aesthetic café.

Combine the strawberries, maple syrup, and 2 tbsp water in a small saucepan over medium heat. Cook, stirring occasionally, until the strawberries have broken down and the mixture is syrupy, about 4–5 minutes. Transfer to a blender or use an immersion blender and blend until smooth, then strain through a fine-mesh sieve into a small bowl, pressing on the solids. Set aside to cool slightly.
Sift the matcha powder into a small bowl to break up any clumps. Add 2 tbsp of the hot water (175°F / 80°C) per serving — 2 tbsp for each bowl if making individually — and whisk in a brisk zigzag motion until the matcha is fully dissolved and a light foam forms on the surface, about 30 seconds.
