Place the cashews in a heatproof bowl and pour the boiling water over them. Soak for at least 30 minutes, then drain and discard the soaking water.
Preheat the oven to 425°F (220°C). Arrange the eggplant rounds in a single layer across two large baking sheets. Brush both sides with the 3 tbsp olive oil and sprinkle with 1 tsp salt. Roast for 20–25 minutes, flipping once halfway through, until the rounds are tender and golden at the edges.
