This spread brings together every classic mezze favorite on one board, and it's naturally built for a vegetarian table. Smoky roasted eggplant gets mashed with tahini, lemon, and garlic into a silky baba ganoush, while a food processor turns chickpeas into impossibly smooth, creamy hummus with that perfect swirl on top. Bright, herby tabbouleh made with fine bulgur, parsley, mint, tomato, and cucumber adds crunch and freshness alongside warm marinated olives infused with thyme, red pepper flakes, and lemon zest. Everything gets arranged on one big board with warm pita for scooping, finished with a drizzle of olive oil and a dusting of smoked paprika. It's colorful, shareable, and packed with layers of texture and flavor in every bite. This one's a genuinely solid choice for a vegetarian spread, whether you're feeding a crowd or just want a relaxed, grazing-style dinner.

Preheat the oven to 450°F (230°C). Pierce each eggplant several times with a fork, then place them directly on a baking sheet. Roast for 25–30 minutes, turning once halfway through, until the skins are charred and collapsed and the flesh feels completely soft when pressed.
Transfer the roasted eggplants to a colander and let them cool for 10 minutes. Once cool enough to handle, split them open and scoop the flesh into the colander, discarding the charred skins. Let the flesh drain for 20 minutes to release excess liquid.
