Combine the lentils and 2 1/2 cups water in a medium saucepan over medium-high heat. Bring to a boil, then reduce heat to low, cover, and simmer for 20–22 minutes, until the lentils are tender and all the water is absorbed. Spread them on a baking sheet and let cool for 15 minutes — they should be dry to the touch, not steaming.
While the lentils cool, preheat the oven to 400°F (205°C) and line a baking sheet with parchment paper. Spread the walnuts on the same or a second baking sheet and toast for 6–8 minutes, until fragrant and lightly golden, watching closely as they can brown quickly. Let cool slightly.
