Combine the rinsed lentils, water, and 1/2 tsp salt in a medium saucepan and bring to a boil over high heat. Reduce the heat to low, cover, and simmer for 20–25 minutes, until the lentils are completely tender and have absorbed most of the water. Drain any remaining liquid and set aside to cool slightly.
While the lentils cook, heat the olive oil in a large skillet over medium heat until shimmering. Add the onion and cook, stirring occasionally, for 8–10 minutes, until softened and golden at the edges.
