Preheat the oven to 425°F (220°C). Toss the cauliflower florets on a large rimmed baking sheet with 2 tbsp melted coconut oil, 1/2 tsp salt, and 1/4 tsp black pepper until evenly coated, then spread in a single layer.
Roast the cauliflower for 25–30 minutes, flipping once halfway through, until the florets are deeply golden at the edges and tender when pierced with a fork. Set aside.
