Freekeh — the smoky, nutty ancient grain made from young green wheat — is the star of this vibrant salad, and it pairs beautifully with crisp cucumber, juicy cherry tomatoes, and a generous handful of fresh herbs. The dressing is a bright, simple blend of extra-virgin olive oil, fresh lemon juice, lemon zest, and ground cumin that ties everything together without a single fermented or leavened ingredient in sight. That makes this dish a genuinely easy win for anyone navigating a yeast-free lifestyle, since grain salads can sometimes sneak in vinegars or other fermented components that are off the table. Here, the acidity comes entirely from fresh lemon, so the flavor is clean, zippy, and totally on-plan. The technique is straightforward — cook the freekeh, let it cool, toss with the vegetables and dressing — and the result looks far more impressive than the effort involved. A scatter of pomegranate seeds at the end adds a jewel-like pop of color and a little burst of sweetness that makes the whole bowl feel like something you'd order at a nice café. Serve it at room temperature for a satisfying lunch or lightly chilled as a refreshing side that holds up well if you're making it ahead.

Combine the rinsed freekeh, water, and 1/4 tsp salt in a medium saucepan and bring to a boil over high heat. Reduce the heat to low, cover, and cook until the freekeh is tender and has absorbed all the liquid, about 20–22 minutes.
Remove the pan from the heat and let the freekeh steam, covered, for 5 minutes. Spread it onto a large mixing bowl or sheet pan and let it cool for at least 10 minutes, until no longer steaming.
