Freekeh — the smoky, nutty ancient grain made from roasted green wheat — is the kind of ingredient that instantly elevates a simple salad into something you'd find on a restaurant menu. Here it's cooked until tender, then tossed with crisp English cucumber, juicy cherry tomatoes, and a generous handful of fresh parsley and mint that keep every bite bright and herbaceous. The dressing is a punchy blend of extra-virgin olive oil, fresh lemon juice, lemon zest, and ground cumin, which ties all the flavors together with a warm, citrusy backbone. Everything is completely plant-based and built from whole, straightforward ingredients, so there's no need to scan labels or worry about hidden seafood-derived additives that sometimes sneak into store-bought grain salads and dressings. A scatter of pomegranate seeds at the end adds little bursts of sweetness and a gorgeous pop of color that makes the whole bowl look as good as it tastes. This one works beautifully served at room temperature, which means it's ideal for meal prep, potlucks, or a laid-back weeknight dinner where you want something fresh but satisfying.

Combine the rinsed freekeh, water, and 1/4 tsp salt in a medium saucepan and bring to a boil over high heat. Reduce the heat to low, cover, and cook until the freekeh is tender and has absorbed all the liquid, about 20–22 minutes.
Remove the pan from the heat and let the freekeh steam, covered, for 5 minutes. Spread it onto a large mixing bowl or sheet pan and let it cool for at least 10 minutes, until no longer steaming.
