Freekeh — the ancient roasted green wheat — is the star of this bright, herb-loaded salad, and it brings a smoky, nutty depth that no grain bowl filler can match. It's a naturally rice-free base that cooks up tender and hearty, making it a genuinely satisfying swap for anyone navigating rice restrictions without wanting to sacrifice substance. Crisp English cucumber, juicy cherry tomatoes, and a generous handful of both parsley and mint keep every bite feeling fresh and lively. The dressing is a simple hit of lemon juice, lemon zest, olive oil, and cumin — bold enough to coat every ingredient without overwhelming the herbs. A scatter of pomegranate seeds on top adds little bursts of sweetness that make the whole bowl feel a little celebratory. Everything is plant-based and built from whole, straightforward ingredients, so there's no label-reading required. Serve it at room temperature for a weeknight dinner or pack it lightly chilled for a lunch that actually holds up.

Combine the rinsed freekeh, water, and 1/4 tsp salt in a medium saucepan and bring to a boil over high heat. Reduce the heat to low, cover, and cook until the freekeh is tender and has absorbed all the liquid, about 20–22 minutes.
Remove the pan from the heat and let the freekeh steam, covered, for 5 minutes. Spread it onto a large mixing bowl or sheet pan and let it cool for at least 10 minutes, until no longer steaming.
