Bright, herby, and built around whole-grain freekeh, this salad is the kind of dish that looks impressive on the table but comes together with very little fuss. Freekeh — a roasted green wheat with a pleasantly smoky, nutty flavor — gets simmered until tender, then tossed with crisp cucumber, juicy cherry tomatoes, fresh parsley, and mint for a combination that feels genuinely refreshing. The dressing is a simple whisk of olive oil, lemon juice, lemon zest, and cumin, which ties everything together with a bright, citrusy kick. Because every single ingredient here is entirely plant-based, there's no need to scrutinize labels or worry about hidden animal proteins — it's naturally free of red meat and any derivatives without any substitutions required. A handful of pomegranate seeds scattered over the top at the end adds a gorgeous pop of color and a little burst of sweetness that takes the whole bowl up a notch. Serve it at room temperature for a weeknight dinner side or pack it lightly chilled for a lunch that actually holds up well. It's the kind of grain salad that converts skeptics.

Combine the rinsed freekeh, water, and 1/4 tsp salt in a medium saucepan and bring to a boil over high heat. Reduce the heat to low, cover, and cook until the freekeh is tender and has absorbed all the liquid, about 20–22 minutes.
Remove the pan from the heat and let the freekeh steam, covered, for 5 minutes. Spread it onto a large mixing bowl or sheet pan and let it cool for at least 10 minutes, until no longer steaming.
