Freekeh — smoky, nutty whole-grain wheat harvested young — is the kind of ingredient that makes a salad feel genuinely satisfying rather than just virtuous. Once it's cooked and cooled, it gets tossed with crisp English cucumber, juicy cherry tomatoes, scallion greens, and generous handfuls of fresh parsley and mint, so every bite is bright and herbaceous. The dressing is a simple shake of olive oil, fresh lemon juice, lemon zest, cumin, salt, and pepper — bold enough to stand up to the grain without drowning the vegetables. A scatter of pomegranate seeds at the end adds little bursts of sweetness and a pop of color that makes the whole bowl look stunning on the table. Everything here is naturally plant-based and built entirely from whole, recognizable ingredients, so there's no label-reading required and no concern about hidden nuts sneaking in through a store-bought dressing or spice blend. It works beautifully served at room temperature, which means you can make it ahead and bring it to a gathering without any last-minute fuss. This is the kind of grain salad that converts people who think they don't like grain salads.

Combine the rinsed freekeh, water, and 1/4 tsp salt in a medium saucepan and bring to a boil over high heat. Reduce the heat to low, cover, and cook until the freekeh is tender and has absorbed all the liquid, about 20–22 minutes.
Remove the pan from the heat and let the freekeh steam, covered, for 5 minutes. Spread it onto a large mixing bowl or sheet pan and let it cool for at least 10 minutes, until no longer steaming.
