Freekeh — smoky, nutty, and satisfying in a way that most grains simply aren't — is the backbone of this bright, herb-forward salad that feels equally at home as a light lunch or a showstopping side. Every ingredient here is a whole, recognizable food: crisp English cucumber, juicy cherry tomatoes, fresh parsley and mint, and a zippy lemon-cumin dressing built from olive oil and real citrus. That matters because people navigating paraben sensitivities often find the trickiest exposures hiding in processed sauces, bottled dressings, and packaged convenience foods — none of which you'll find here. The dressing comes together with a quick whisk, and the whole dish leans on fresh produce and pantry staples you can easily source and trust. Letting the freekeh cool before tossing everything together keeps the cucumber crisp and the herbs vibrant rather than wilted, so the textures stay lively all the way to the table. A handful of pomegranate seeds scattered over the top adds a jewel-like pop of color and a little burst of sweetness that makes the whole bowl feel genuinely special. It's the kind of clean, feel-good cooking that proves eating carefully doesn't mean eating boringly.

Combine the rinsed freekeh, water, and 1/4 tsp salt in a medium saucepan and bring to a boil over high heat. Reduce the heat to low, cover, and cook until the freekeh is tender and has absorbed all the liquid, about 20–22 minutes.
Remove the pan from the heat and let the freekeh steam, covered, for 5 minutes. Spread it onto a large mixing bowl or sheet pan and let it cool for at least 10 minutes, until no longer steaming.
